    Sweet Potato Pone

    Ingredients

    • 1 cup(s) wine
    • 2 tablespoon(s) rum
    • 4 pound(s) sweet potatoes, peeled
    • 1 pound(s) yellow yam, peeled (optional)
    • 3 packet(s) Grace Coconut Milk Powder
    • 4 cup(s) warm water
    • 2 ounce(s) Grace Margarine
    • 1 cup(s) raisins, soaked
    • 1/4 cup(s) Grace Cornmeal
    • 1/4 cup(s) flour
    • 1 tablespoon(s) nutmeg
    • 1 pound(s) dark sugar
    • 1 tablespoon(s) mixed spice
    • 1 tablespoon(s) vanilla
    • 1 tablespoon(s) cinnamon powder
    • 1 teaspoon(s) salt

    Method

    1. Peel and grate purple / white sweet potatoes (boniatos) and yellow yam (name) and set aside.
    2. Dissolve Grace Coconut Milk Powder in warm water, melt margarine.
    3. Combine grated sweet potatoes,yam, soaked raisins, Grace Cornmeal, flour and dark sugar in a large pudding pan or a bowl.
    4. In another bowl,combine the Grace Coconut Milk, melted margarine, mixed spice ,vanilla, nutmeg, cinnamon powder, salt, wine and rum and mix well.
    5. Add the liquid ingredients to the grated potato mixture and stir well.
    6.  Scrape the mixture in a greased dutch pot lined with aluminum foil, pudding pan, or a baking tin covered and put into an oven preheated to 350⁰F.
    7.  Bake for about 1 hour and 15 minutes.

    Broad Bean Stew

    Serves 4

    Ingredients

    • 2 tablespoon(s) olive oil
    • 1 medium onion, chopped
    • 2 stalk(s) escallion, chopped
    • 1 tablespoon(s) ginger, chopped
    • 3 clove(s) garlic, finely chopped
    • 2 teaspoon(s) turmeric powder
    • 1 cup(s) pumpkin, diced
    • 1 cup(s) Grace Coconut Milk
    • 1 can(s) Grace Broad Beans, drained
    • 1/2 teaspoon(s) black pepper

    Method

    1. Heat olive oil and use to saute the chopped onion, escallion, ginger and garlic; stir constantly.
    2. Mix in the turmeric powder and the diced pumpkin until the flavours develop and the pumpkin improves in colour.
    3. Pour in the coconut milk, stir and bring to a boil.  Allow to simmer until the pumpkin is tender.
    4. Fold in the broad beans and black pepper.

    Coconut Pumpkin Spice Latte

    Ingredients

    • 2 cup Grace Coconut Milk
    • 2 tablespoon pumpkin puree
    • 1 tablespoon sugar, depending on how sweet you like it
    • 1 tablespoon vanilla extract
    • 1/2 teaspoon pumpkin pie spice, plus more for serving
    • 1/2 cup strong hot coffee
    • Whipped cream, for serving

    Method

    1. Add milk, pumpkin puree, and sugar to a saucepan over medium heat. Heat until hot, but do not boil. Remove the saucepan from the heat and whisk in the vanilla, pumpkin pie spice, and the coffee.
    2. Divide the mixture between two mugs. Top with whipped cream and a sprinkle of pumpkin pie spice.

    Ingredients

    • 1 pound(s) salted beef, pre-soaked, cubed
    • 1/2 pound(s) fresh beef stew, trimmed, cubed
    • 1 cup(s) Grace White Vinegar
    • 14 cup(s) water
    • 4 ounce(s) all purpose flour
    • 1 1/2 teaspoon(s) salt
    • 2 tablespoon(s) Grace Vegetable Oil
    • 3 clove(s) garlic, crushed
    • 2 slice(s) breadfruit, peeled, sliced
    • 1 pound(s) yam, peeled, diced
    • 1/2 pound(s) cocoa, peeled, diced
    • 2 stalk(s) escallion, chopped
    • 2 sprig(s) thyme
    • 1 whole scotch bonnet
    • 6 whole okras, cut in halves
    • 2 cup(s) Grace Coconut Milk
    • 5 whole pimento berries
    • 2 stalk(s) callaloo, stripped, chopped
    • 1 packet(s) Grace Cock Soup

    Method

    1. Clean and wash meat in a solution of Grace Vinegar and (2 cups) water.
    2. In a bowl, combine flour salt and enough water to form dough, knead and set aside to relax for 10 minutes. Place remainder of water on to boil.
    3. Heat Grace Vegetable Oil in a soup pot and add pre- soaked salted beef, fresh beef stew, garlic, sliced breadfruit, yam, and cocoa, stir well.
    4. Add 12 cups boiling water to the pot, stir and leave to simmer for 45 minutes.
    5. Add escallion, thyme, whole scotch bonnet pepper, okras, and Grace Coconut Milk, pimento berries, callaloo and Grace Cock Soup Mix, stir well (to prevent food from sticking to the pot).
    6. Shape spinners and add to pot and leave to simmer for another 15 minutes.
    7. Adjust consistency with remaining boiling water if desired and season with remaining 1 teaspoon salt.
